Spinach Smoothie

My goal for this marathon is to be in the best physical shape possible on race day.  Nutrition is obviously a critical part of my training, and my main nutrition downfall is that I don’t eat enough vegetables. In general, I eat really healthily – whole grains, lean meat, plenty of fruit, lots of water, and a plethora of vitamins.  But I definitely don’t reach my daily vegetable requirement, and I probably drink a little too much wine. In an effort to reduce my wine consumption, I’m replacing it with sparkling water (I love Pellegrino), and I’m incorporating veggies to my morning smoothie.  So far I’ve only tried adding spinach, and it tastes great! Here is the smoothie I made this morning (with estimated quantities since I don’t like to measure):

1/2 banana

1/3 cup frozen strawberries

1/3 cup frozen peaches

handful of spinach (maybe 1/3 cup?)

1/4 cup vanilla soymilk

1/4 cup orange juice

2 tbsp soft tofu

1 tbsp flaxseed
